Student Choice: Healthy Vegetarian Dining

Giving Students Plant-Based Dining Options

Goals of the Campaign:

  • Work with Food Services to institute consistent and specific ingredient labeling system
  • Work with Food Services to provide students with at least one plant-based (vegan) entree at every dining hall for every meal
  • Build a coalition of students concerned about the dorm food available because of religious, ethical, dietary, or allergy reasons
  • Educate student body about benefits of vegan diet and the importance of providing real food choices for everyone

SAMPLE PLANT-BASED MENU OPTIONS:


BRUNCH

  • Tofu Scrambler w/ Veggies
  • Black Bean Burger on Pita
  • Tofu Picante Fajitas
  • Vegan Waffle Mix w/ Fruit Topping
  • Whole Wheat Vegan Pancakes
  • Soy Sausage Patties

LUNCH

  • Tomato Basil Soup
  • Tofu Stuffed Shells w/ Marinara Sauce
  • Spicy Eggplant Cutlets
  • Veggie-Nut Burger on Whole Wheat Roll (or Pita)
  • Vegan Alfredo Pasta w/ Broccoli and Mushrooms
  • Vegan Brownies w/ Fudge Frosting

DINNER

  • Veggie Chili w/ Vegan Cornbread
  • Curried Veggies over Brown Rice w/ Coconut Milk
  • Flame Grilled Garden Burgers
  • Seitan and Veggie Fajitas
  • Garlic Mashed Potatoes w/ Veggie Gravy
  • Soy Dream Chocolate and Vanilla Ice Cream

How You Can Help:

  • If you live in UW Housing, request that more plant-based meals be offered in the dining halls (talk with food service workers and fill out comment cards
